
This is one of the classic Chinese vegetable dishes. My mom specializes in cooking vegetarian dishes, for as long as I can remember, we have always had stir fried green beans as one of the regular dishes at home. The best green beans are those chubby ones with giant peas, once cooked, they have a very soft texture that makes them super yummy!
Unfortunately, I have yet to seen those chubby green beans outside of China. In American supermarkets, the most typical green beans are the ones featured in the picture. They make a good dish too.
