Stir Fried Shitake Mushroom and Pork

For this recipe, you need to get shitake mushrooms.  Of course, in the freezing cold land of Canada, shitake mushrooms are often only available in dried form and packaged in bags.

Once you get these dried mushrooms, you need to soak them in water for a couple hours.  Here's a picture of the soaking process:

 Once the mushrooms are aready, this dish's other important ingredient comes in: Pork.

The Chef only uses top grade lean meat.  I'm very sensitive to fat parts of the meat and I love this dish.

Beggar’s Chicken

Chef Jiang found this great chicken recipe online called Beggar's Chicken.

Neither of us are big eaters of meat, so we set out to find a small size chicken as this recipe requires a WHOLE chicken.

At Dominions, we picked up a tiny hen.  (I'm amazed there are chicken this small)

And after a long time in the oven, viola, I present the Beggar's chicken!

Not sure where the strange name came from, but this is one of the few meat dishes I like. :)

Delicious shitake mushroom and chicken makes a perfect hearty dish~

My favorite part of this dish is the texture of the mushroom.  Remember, you have to get Shitake mushrooms and not just any type of mushrooms.  Shitake is one of the more expensive mushrooms and is usually only available in dried form in American Supermarkets.  You will need to soak the dried mushrooms in water before cooking.

I would recommend eating this dish with white rice and only make them in small portions.  The portion advice is important!  I usually can eat the entire plate if served because the mushrooms are so soft and easy to chew.  Of course, then I get this horrible stomache and feel bad for the rest of the night. Annoyed  ( I know…I need to learn self control when it comes to food.)

Fried Meat Balls

Fried meat balls are great for appetizers! The Chef makes them out of chicken meat.  We usually pick fresh 100% lean chicken meat from the super market.  The Chef then slices the meat into small chunks.  I believe a secret souce mixture involving potato starch and spices is added to the prepared meat before they're fried.  The Chef will post up more details.
