To make this dish, you start with fresh raw fish.

Make sure you cut the fish into equal chunks and bread it evenly.

Prepare the frying pan and heat up the oil.
The fish heats up quickly, don't overfry them. ENJOY!

Here the beautiful fish in its raw form. As shown in the picture, you put finely chopped green onion and garlic on top of the fish. (The fish should be cleaned, most of the supermarkets will clean them free of charge). Make sure the fish is fresh, this one was live when we picked it out.

Here's the yummy after piece. Ready to serve!

Like squids? This will be your favorite dish. The Chef loves squid. When I was growing up…I always thought there were something funny about those weird looking squid chunks. But because the chef likes them, we had them all the time.
After 20ish years……..I have learned to like squid curls. They are very chewy.

Make sure you get the de-shelled shrimps for this, we want just the meaty shrimp inside….no heads. The sauce is critical and consists of finely chopped green onion, a bit of garlic, ginger, salt and a bunch of other ingredients. (experiment a little, everyone's taste is different, this is one of those dishes that you can customize to get your own version!)

Not sure if "seared" is the correct terminology, I thought it's only suppose to be applied to dried and crispy fish dishes….. Oh well, this fish is one of the most famous fish in China, it's called "Dao Yue", if translated word by word, it is the "Knife Fish". The fish is rather long, thin and flat. As you see in the pictures, these are chunks of Knife fish, sauteed/seared in a special flavored sauce prepared personally by the chef. I like this dish, I like fish.

My mom like these fish, they come in slices in a frozen package. Fairly good deal too, I think they're about $8.00 a package.
