I used to get it from this fast Chinese food place every week near school.

Does anyone know how to call these things in English? They are called "Ling Jiao" in Chinese and I don't think I've ever seen them in American Supermarkets.
They grow in the wild under water, I saw their roots when I went fishing in the lake once.
Basically, these nuts have a thick shell, you buy them raw, boil them, then chop them open. The inside tastes almost like potato. To get the inside out, try using a tooth pick or something small and pointy
Not sure if they can be considered an exotic healthy food but try them if you ever see them. It's kind of neat to try these weird things.

Healthy dish. Very very good for you. A great dish to have together along with rice and perhaps congee.
The shrimp you can get in dried form in bags from just about any supermarket. You can use them for soup, add a bit for dishes here and there, a must have for any kitchen!

Did you know the thick rough squash skin becomes all soft and chewy after it's been steamed? (You can't do the same with pumpkins)
These squash contain all sorts of minerals and are suppose to be super healthy and good for you! Enjoy!
I looked up the name for these squash in the supermarket: Nugget Squash.
Update: Very important details I previously forgot: you need to get those bamboo containers to steam them in. (dimsum bamboo containers…ring a bell?)
Steam about 40 minutes. ^_^ That's for half a squash (medium size ones that are…about 8" in diameter). I don't think bigger ones will take much longer. If you're not sure, just check on them after half an hour or so, poke a piece with a toothpick or taste one. It's not hard to tell whether or not they are done. Your taste buds will tell ya!
